Bar Clinic brings mysticism to their cocktails, believing that cities have disciplined our steps, yet we still yearn for unbridled growth.

The mountains and wilderness are the bar's laboratory. For the popup's drink list, they've extensively used wild ingredients full of personality—even with a touch of aggressiveness—encapsulating the soul of mountain breezes, rainforests, meadows, and streams in each glass.

These untamed flavors are the original invitation from the wild.

Alquímico, Colombia

COA Shanghai is bringing two bartenders from Alquímico, Colombia, named in the top 10 in the World's 50 Best Bars for the prior two years.

In Spanish, 'alquímico' means belonging to or related to alchemy, the transforming of precious metals and improving medicinal cures.

Alquímico focuses on appreciation of fruits and the resources of regions of Colombia. In 2020 they initiated the 'From the Bar to the Farm' project whereby staff of the bar participated in agricultural work sourcing ingredients to be used at the bar.

The primary objectives were to "work the land, learn, connect, and sustain themselves from it."

Chen recently placed third at the 2025 The Wonderful Race Greater China Woodford Reserve Cocktail Competition.

Bar Without now has two locations in Taipei, both embodying the philosophical concept of 'Without'—a kind of Zen belief from one of the co-founders—and infuse this into every cocktail.

Always connecting with other bars across Asia and beyond, Bar Choice welcomes Bar Lonely of Tainan on August 7.

Though tucked away in an old lane house in its home city, Rossell Hu will be bringing the flavors of Taiwan to the forefront at Bar Choice.

Hu, the founder and director of Bar Lonely, is dedicated to researching and developing tea cocktails in Tainan, where he also has a coffee-focused bar called Kohaku.

He has also been involved in the Tainan Cocktail Festival's activities, and recently placed second at the 2025 The Wonderful Race Greater China Woodford Reserve Cocktail Competition.

Luca Baioni, my mentor and the brilliant mind behind Latteria in Adelaide, Australia

From 7pm to 8.30pm, and by reservation only, we're hosting a cocktail degustation: four cocktails total (two from each guest bartender) for RMB388, including good vibes, laughs, popcorn and surprise shots.

Kinsman is a speakeasy-style cocktail bar in Hong Kong with nostalgic Cantonese vibes (particularly inspired by Wong Kar-wai's In the Mood for Love), and that uses traditional Cantonese spirits and ingredients in modern cocktails.

The opening of their new location in Shanghai has created some serious buzz, and Prabowo will be sharing the vision of Penicillin with UTC on Friday, August 15 from 8pm-midnight.

On August 17, Jon Lee of Penrose in Kuala Lumpur (listed No. 10 on Asia's 50 Best Bars for 2025) will get behind the Union bar top.

Finally, Bar Trigona of Kuala Lumpur, marked No. 39 on the Asia's 50 Best Bars list, will share their Head Bartender Rohan Matmary with Shanghai.

Trigona is known for a focus on Malaysian farming and specifically honey, highlighted in their cocktails, with a mindset toward sustainable honey harvesting.

Kavalan Masterclass

Kavalan has built its reputation in the whisky world on No Age Statement (NAS) products, but this 15-Year-Old marks their first-ever age-stated release.

What makes it extraordinary? Taiwan's subtropical climate accelerates the 'angel's share' evaporation, and intensifies the interaction between spirit and barrels.

Maturation here is a challenge—losing up to 15% annually to evaporation while achieving 15 years of balanced flavor requires masterful skill.

Usually such extended aging was deemed only possible in temperate regions near 50°N latitude (such as Scotland or Japan).

To showcase this milestone, Kavalan will host two tasting dinners in Shanghai and Guangzhou, featuring the 15-Year-Old.
