Diners will enjoy an array of delicacies such as king crab legs with horseradish mousse, tarragon, sun dried tomatoes, cucumber and celeriac; Duck in the Forest foie gras mousse with mushroom jelly, black garlic and microgreens; sous vide beef tenderloin with parsley puree, burned onions, kohlrabi, pickled carrots and jus; and Valrhona chocolate cake with a yuzu dome, fennel olive oil mango and lemon sorbet. Both food and presentation are exquisitely arranged to warm you up in this winter. The new menu is available from now.

Hyatt on the Bund Chef de Cuisine of VUE Restaurant - Jonathan Clarke

Recently, Hyatt on the Bund appointed Jonathan Clarke as its new Chef de Cuisine of VUE Restaurant. Chef Jonathan hails from the United Kingdom. He graduated from Fife College in the United Kingdom and joined the hospitality industry in March 2007 as Commis of St Andrews, United Kingdom.


Jonathan has more than 12 years of experience in the hospitality industry, bringing his extensive background in culinary management gained in a number of hotels, including Sheraton Grand Hotel & Spa Edinburgh, Sheraton Grand Hotel Dubai, Pompadour by Galvin Waldorf Astoria United Kingdom and Marriott Hotel AI Forsan, Abu Dhabi. Prior to joining Hyatt on the Bund, Jonathans most recent assignment was Head Chef for Bankside Hotel, Autograph Collection London since September 2018.


In his role, Chef Sebastian will be in charge of the VUE Restaurant culinary operations.


Under the leadership of Executive chef Sebastian, we are confident that Jonathan will bring new inspiration and ideas to the VUE Restaurants and provide an exclusive high-end gourmet feast for food lovers over the years, says General Manager Mark Foxwell.
