And then there is Jade on 36 Restaurant, where Christmas dinner is elevated both literally and figuratively.
Perched high above the river, with Shanghai's skyline arranged like an illuminated toy set below, the dining room is given over to a multi-course performance that shows admirable ambition.
For Christmas there's a choice of 5-, 6- or 7-course festive menus showcasing the very best of French cuisine.
Mackerel wrapped in foie gras, is a dish that begins with sumptuous intent. The fish's natural oiliness is tempered by the foie's buttery depth, while a cherry-and-blackberry coulis brings a vivid, almost mischievous acidity.
A whole prawn, deceptive in its simplicity, sitting upon a bisque reduced so intensely that it seems to concentrate the entire ocean into a spoonful, accompanied by a delicate tartlet of shrimp tartare and bright pearls of finger lime.
The scallop is a study in elegance: caramelized edges, silky center, sake foam drifting over the shell like winter mist, bamboo shoots tucked beneath for quiet crunch.
Red snapper, cod, and prawn are poised in a seafood broth so glossy you could almost see your reflection in it—if you weren't too busy devouring it.
An M7 wagyu beef cheek is served, perfectly pink. Tender and flavorful alongside artichoke, tomato and house made ricotta.
Desserts include a chocolate mousse cigar of Churchillian proportions. Playful, silky, and served with a superb quenelle of coffee ice cream.
