Celebrate the Double Holiday with a Seafood Feast!


The weather is getting cooler and the fragrance of osmanthus brings the scent of autumn. It's the Mid-Autumn and National Day Golden Week holidays again, a perfect time to get together with friends and family and enjoy a delicious meal!


Selecting quality ingredients and interesting recipes can be a very important part of the preparation. Lohikeitto

Arctic Char Soup


This traditional Finnish Lohikeitto is very popular in northern Europe. The warm soup with the firm texture of Arctic Char is perfect for a cozy get-together with the family on a breezy autumn day.


Ingredients

Arctic Char 200g

Carrot Half

Potato 1pc

Spring onion 1 pc

Dill one small handful

Light cream 100ml

Butter 1 small spoon

Stock/stock cube

Salt and black pepper to taste



Directions

1. Shred the green onion, thinly slice the carrot, roll-cut the potato into small slices or cubes, thaw the Arctic Char and cut into small pieces.

2. Soften the butter over medium heat and add the spring onion when the oil starts to bubble. Then add the carrot and potato and saut until lightly golden around the edges.

3. Add water to cover the ingredients, add stock or stock cube, cook with lid on with medium heat for 10-15 minutes. Then add 100ml of light cream.

4. Add Arctic Char, cook with lid on with medium-low heat for 3-5 minutes.

5. Add a pinch of salt and black pepper to taste, then sprinkle chopped dill and serve.

Halibut

Teriyaki Halibut with Tomato Sauce


Halibut is delicious already when simply fried with salt and black pepper, but this teriyaki style is an upgrade. The fish is fried until golden brown on both sides and served with a rich tomato sauce and teriyaki sauce to give the halibut a richer taste and texture!



Ingredients

Halibut 200g

Tomato 2pcs

Onion half

Ginger 2 slices

Soy sauce 2 tsp

Oyster sauce 2 tsp

Dark soy sauce 1 tsp

Chinese cooking wine 1 tsp

Honey 2 tsp

Water two 1/2 serving bowls

Salt and pepper to taste



Directions

1. Thaw the halibut in the refrigerator overnight, drain on kitchen paper towel and rub both sides with salt and black pepper.

2. Heat oil in a pan and fry the halibut on both sides until golden brown, set aside

3. Chop onion into small pieces and saut, cut tomatoes into small pieces, cook in a pan to soften, add ginger, add a small bowl of water and boil it, then add halibut to the pan

4. Mix soy sauce, oyster sauce, dark soy sauce, cooking wine, honey and half a bowl of water to make teriyaki sauce

5. Pour the teriyaki sauce into the pot and cook until the sauce is absorbed.


Arctic Shrimp


Icelandic deep-sea fish, cold waters, long growth cycle, firm texture


Stir-fried shrimp in three colors

cooking wine, oil and salt


Directions

1. Dice the ingredients and defrost the Arctic shrimp in the fridge overnight.

2. Heat the oil in a pan and stir-fry lightly the carrots, cucumber and corn kernels till almost ready.

3. Add the Arctic shrimp to the pan, add the cooking wine around the edge and stir-fry over high heat for about two minutes!
